Poly, Sydney

Located at the base of the Paramount House Hotel, Poly is a destination from Anthony Gill Architects. Winner of the 2020 Eat Drink Design Award 2020 for Best Restaurant, the red door beckons you inside and the intimate wine-friendly menu from Mat Lindsay keeps you there, as does the choice of 160 drops from sommelier Julier Dromgool.

Attica, Melbourne

Chef Ben Shewry uses creative flavours and innovative techniques at his relaxed, modern Australian eatery. The multi-course tasting menu offers something different and keeps locals and travellers coming back for more. Winner of Gourmet Traveller Restaurant of the Year 2020.

Arc Dining, Brisbane

A chic, glam wine bar with a conservatory-style dining space from sommelier Ian Trinkle and chef Alanna Sapwell. Sapwell recently won Best New Talent at the 2020 Gourmet Traveller Restaurant Awards for her bold flavours and clever takes on classic dishes like her house cake with finger lime sprinkles.

Magill Estate, Adelaide

A degustation with finesse from Chef Scott Huggins nestled amongst the Penfolds winery. Take aprt in the twilight tour to soak up a guided historical tour through Penfolds, including a visit to the vintage collar. Finish your tour with a seven course degustation experience where each course is perfectly matched by the onsite Sommelier with the perfect drop, naturally.

Fico, Hobart

Italian for fig, this spot is a regular on the best restaurants in Tasmania list. Influenced by Europe, the restaurant has a commitment to sourcing local produce from fishmongers, farmers and butchers. Owner-chefs Frederica and Oskar change the menu weekly to ensure a local and seasonal feast. Except for Sundays, they serve up an 8 course feast aptly dubbed Let Us Cook For You.

Aubergine, Canberra

Aubergine has been run by husband and wife Ben and Andrea Willis since 2008, and is a regular on best food lists including #1 in the ACT, top 100 in Australia and Best Wine List of the year. A focus on garden grown produce like mulberries and silverbeet has diners savouring through the set tasting menu and the sleek, monochromatic floor to ceiling curtains gives a luxe feel to the dining room that makes diners feel special.

Tali Wiru, Uluru

Tali Wiru means beautiful dune and celebrates this special four-course dinner under the stars of the Southern Desert sky. Eat at this open-air restaurant with views of Uluru and the domes of Kata Tjuta as you feast upon local food infused with First Nations flavours and delicacies like the pressed wallaby with fermented quandang.
