Influenced by Europe, the restaurant has a commitment to sourcing local produce from fishmongers, farmers and butchers. Owner-chefs Frederica and Oskar change the menu weekly to ensure a local and seasonal feast. Except for Sundays, they serve up an 8 course feast aptly dubbed Let Us Cook For You.
Aubergine has been run by husband and wife Ben and Andrea Willis since 2008, and is a regular on best food lists including #1 in the ACT, top 100 in Australia and Best Wine List of the year. A focus on garden grown produce like mulberries and silverbeet has diners savouring through the set tasting menu and the sleek, monochromatic floor to ceiling curtains gives a luxe feel to the dining room that makes diners feel special.
Tali Wiru, Uluru
Tali Wiru means beautiful dune and celebrates this special four-course dinner under the stars of the Southern Desert sky. Eat at this open-air restaurant with views of Uluru and the domes of Kata Tjuta as you feast upon local food infused with First Nations flavours and delicacies like the pressed wallaby with fermented quandang.
